Winemaker's Notes

Once in the glass, this 2016 Clos Pegase Napa Valley Estate Cabernet Sauvignon reflects an opaque dark purple core. As the aromatics waft towards the nose, they deliver generous layers of cassis, antique wood, cigar box and black currant. On the palate, brooding dark fruits give way to briar, black currant and forest floor. More subtle notes of graphite, wet clay and seasoned leather, transition across the palate. The tannins are nicely balanced by the lush fruits which are in-turn kept fresh by the crisp acidity. This 2016 Estate Cabernet Sauvignon continues to evolve on the palate showing depth and complexity with a lengthy finish

John's Notes

Thank you for all your feedback on the website.  The developer and I have been working on a couple modifications based on your comments, and those changes went live this morning.  Btw, huge thanks to Amanda from Brkich Design – she’s great as is the company

  • At-a-glance sweetness indicator: I’ve had half dozen or so folks tell me that they would like the ability to quickly discern whether a wine is dry, semi-sweet, or sweet without having to go into the Nerdy Details.  You got it
  • Sorting by Red, White, and Rosé: Makes sense.  We want you to be able quickly sort through The Cellar to find what you like based on your preferences
Nerdy Details

Winemaker:  Clos Pegase

  • The Clos Pegase label features Pegasus, painted circa 1890 by the French artist Redon. This painting is winery owner Jan Shrem’s favorite work of art from his extensive private collection

Variety: 100% Cabernet Sauvignon

Region:  Napa Valley, California

Climate:  The Vaca Mountains run along the eastern side of Napa Valley, while the Mayacamas Mountains run along the west and form a boundary with Sonoma County.  Accordingly, Napa County has a range of climates and is subject to cooling influences including morning fogs, afternoon breezes, and various altitudes

  • Clos Pegase was founded in 1983 on a 50-acre vineyard in Calistoga. We also own and sustainably farm an additional 40 acres in the Palisades of Calistoga (northern Napa) and 365 acres in Carneros (southern Napa)
  • Each of our three vineyard locations grows Cabernet Sauvignon. Mitsuko’s in Carneros dedicates a section with unique rocky, well-drained soil and maximum sun exposure to Cabernet Sauvignon. Applebone and Tenma in Calistoga are prime Cabernet growing areas, offering sun and terroir distinctive to the region
  • Each block was hand harvested individually and brought to the winery where the clusters were sorted again before being destemmed

  • 50% of the grape clusters were crushed and 50% were left as whole berries during fermentation
  • The must was allowed 2-4 days to cold soak, followed by a warm fermentation using a variety of different yeast strains
  • With two pump overs a day, the wine was pressed off the skins once it was dry. Wine was then sent to barrel to undergo malolactic fermentation
  • After fermentation was complete, wine was racked one more time and then allowed to rest in barrel (35% new French oak) for an additional 18 months in our caves
  • When the wine was ready, we gently filtered and bottled in mid-May of 2018

Alcohol: 14.9%

Pairs Well With: Filet Mignon, beef tips with oyster mushroom sauce, stuffed peppers in red sauce

Jeb Dunnuck (91): The 2016 Cabernet Sauvignon from Clos Pegase is an attractive effort with some gamey black and blue fruits, spice, lavender, and melted licorice in its rich, full-bodied, flamboyant style. It’s a big, rich, mouthful of a wine that has loads to love
