Caymus Cabernet has aromas and flavors which can only be achieved through “hang time” – a technique which chances the loss of crop if early winter sets in. Leaving the fruit to “hang” on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet
In response to multiple requests, I just received a shipment of Caymus Cab Sauv 2019, possibly the “best vintage in recent times” according to Wilfred Wong based on his Jan 29, 2021 tasting. This bottle is so new to market that during a call with the Wagner Family of Wines, I was advised that its marketing team is still a week or two away from posting trade specs for this vintage to its website. Definitely a must-have for Valentine’s Day!
